It appears that Torrie Wilson herself asked for her release from the WWE.
Wilson was told be surgeons that she would never be able to wrestle again due to her back problems, but the WWE wanted to keep her with the company to feature her in a non-wrestling role by having her make special appearances.
Nonetheless, she opt to leave the company. WWE is covering all of Torrie Wilson's medical expenses.
